Beef, fat and fire: How to build a better burger

“When I started grilling, the burger to me became the most iconic American food,” said Kim, who in 2015 opened a SpOt restaurant on the 2800 block of Girard Avenue in Brewerytown. “But it’s also the most abused and misunderstood sandwich out there.”

Beef, fat and fire: How to build a better burger
For burger chef Josh Kim, falling in love with the humble beef patty opened the door to a world of science. By the time he launched his SpOt Gourmet Burgers truck in 2012, he had long since learned to press a thumb-sized dimple into the center of each burger to prevent it from puffing when the proteins contracted, and knew what it meant when the juices started to cascade over the top like a sizzling, bloody waterfall.

Large roaches, moldy turkey close down Philly eateries | Clean Plates
Summer can bring out the bugs and nowhere was that more apparent than in this round of Clean Plates. There were three different sized roaches on a shelf above the prep table in one facility, another had adult and baby roaches crawling in the sink and in a box with clean utensils.

After a long battle with the locals over its ...

After a long battle with the locals over its original site, the Philadelphia Housing Authority entered into a ground lease with the Peace Park at the end of last year at a new location, giving it the security of official status. Now, the Peace Park is planning to increase its influence in three major areas: agriculture, education, and design. Starting in September, the Park will expand in two directions. It will begin a partnership with Vaux Big Picture High School, hosting interns from the school, and the community is scheduled to break ground on a new school house on the “main campus” of the park, located in the 2200 block of West Jefferson Street.

North Philadelphia Peace Park expanding its educational opportunities
The North Philadelphia Peace Park, carefully but unofficially tended for five years by residents intent on beautifying their neighborhood, prides itself on being more than a park. Scattered with colored tires, the grassy plot supplies the community with fruits, vegetables, and a place to relax.
