Kombucha sales have doubled in the past five years, and the growth is expected to continue.
Whats the deal with this suddenly popular beverage, and why is it trending so hard? Not only that, but what is it, anyway?
That last one is easy: Kombucha is basically fermented tea and sugar, according to Philly fermentation expert Amanda Feifer.
Feifer, better known as Phickle, is author of Ferment Your Vegetables and perhaps the citys most prominent fermentation persona. Shes been giving classes on kombucha for the better part of a decade, and her knowledge ranges from how to make it yourself to why youd want to.
Theres no proven medical benefit to the bubbly drink, Feifer notes, but she and a whole lot of others are walking proof that it makes them feel good when they drink it.
