4-01.1 (A): Food/food service article storage does not provide protection: Food/Food service article storage does not provide protection, at time of inspection multiple food items including uncovered fried rice, and uncooked uncovered raw chicken (removed from walk-in box for food prep) was observed in the storage room. All food items should be covered when not being used. Management instructed to initiate immediate corrective action. 5-01.1: Food not protected from contamination: Food is not protected from contamination, at time of inspection multiple cooked and uncooked food items were observed uncovered throughout food prep area, inside of the walk-in box , and reach-in units. All food items should be covered when not being used. Multiple meats observed uncovered and being directly stored on shelf of refrigerator in basement. Also observed was the direct floor storage of a painters' bucket (containing raw uncovered uncooked chicken) next to walk-in box, and the direct floor storage of a bag of onions in the rear storage room. All food items should be covered when not being used, and elevated at least 6 inches off of the floor. Management instructed to initiate immediate corrective action. 8-01.2 (C): Hot water not provided: Hot water is not provided, at time of inspection hot water at multiple sinks measured at the following temperatures: - hand sink in restroom 37.2 °F - 3 - basin sink 48.6° F - prep sink 37.4 ° F Management instructed to initiate immediate corrective action. 9-02.1: Employee hands not washed before food handling: Employee hands are not washed prior to food handling activities, at time of inspection two employees walked in from outside and went straight to food prep until sanitarian instructed them to wash their hands. Hands should always be washed prior to food preparation. Management instructed to initiate immediate corrective action. 9-02.3 (A): Employee not following good hygiene: Employee observed not following good hygienic personal practices. After being instructed (by sanitarian) to wash his hands, male employee was observed rinsing (not properly washing with soap) his hands in the 3- basin sink, hands should only be washed in a hand washing sink. The 3 - basin sink should be used for UTENSIL CLEANING and SANITIZING purposes ONLY. Management instructed to initiate immediate corrective action. 10-02.3: Equipment for cleaning, sanitizing improperly operated: Equipment used for cleaning/sanitizing is improperly operated, at time of inspection male employee was observed using the 3-basin sink as a hand sink. The 3-basin sink should be used for WASHING, RINSING, and SANITIZING purposes ONLY. Management instructed to initiate immediate corrective action. |
