Critical violations 2-01.1 (B): Adulterated or unwholesome food: Adulterated or unwholesome food is present, dark fryer grease and colloidal particles were observed at time of inspection. NOTE: Employee said that this was due to the overuse of one fryer station, the adjoining fryer is broken. Management instructed to initiate immediate corrective action.
9-02.3 (A): Employee not following good hygiene: Employee observed not following good hygienic personal practices, at time of inspection employee walked into the kitchen, placed items deep down in the trash, dipped his hands in the basin of the 3- compartment sink (full with sanitizer), then proceeded to food prep. He was instructed to empty the sanitizing compartment, clean, refill, and then wash his hands in an appropriate hand washing sink. Also observed as a result of the hand sink in the kitchen not having handles, employees wash their hands either in the food prep sink (near cook station) or in restroom. NOTE: Food prep sink should be used for food prep only, and the 3-basin sink should be used for WASHING, RINSING, and SANITIZING purposes ONLY. Management initiated immediate corrective action.
