Critical violations 2-10.2: Ice not protected from contamination: Ice is not protected from contamination, at time of re-inspection ice scooper was observed being stored inside of ice. Ice scooper should be stored in a separate clean and sanitized empty container. Management instructed to initiate immediate corrective action.
5-01.1: Food not protected from contamination: Food is not protected from contamination, at time of inspection food items were observed uncovered inside of walk-in box and domestic deep freezers in basement. Food items that were covered were done so with cloth linens, cloth linens DO NOT offer protection remove immediately. All food products should be covered with a lid or approved plastic covering, when not being used. Management instructed to initiate immediate corrective action.
9-02.1: Employee hands not washed before food handling: Employee hands are not washed prior to food handling activities, employee was observed conducting multiple activities before returning to food prep. Employee was instructed (by sanitarian) to wash his hands immediately. Management instructed to initiate immediate corrective action.
9-02.3 (A): Employee not following good hygiene: Employee observed not following good hygienic personal practices, after being instructed (by sanitarian) to wash his hands, employee proceeded to wash his hands in the 3- basin sink , the 3-basin sink should be used for WASHING, RINSING, SANITIZING, purposes ONLY. Management instructed to initiate immediate corrective action.
9-04 (B): Wiping cloths used in unapproved manner: Wiping cloths are used in an unapproved manner, at time of re-inspection wiping linen cloths were observed being used to cover select food items inside of the walk-in box. Cover food items with approved covering. Management instructed to initiate immediate corrective action.
10-02.3: Equipment for cleaning, sanitizing improperly operated: Equipment used for cleaning/sanitizing is improperly operated, due to 3 -basin sink being used for food preparation, 3- basin sink should be used for WASHING, RINSING, and SANITIZING purposes ONLY. Management instructed to initiate immediate corrective action.
10-02.4: Unapproved sanitizer: Unapproved sanitizer is being used, at time of re-inspection 101 generic bleach was observed being used as sanitizer. Commercial CLOROX or sanitizer tabs should be used as sanitizer. Management instructed to initiate immediate corrective action.
