Small Snapple refrigerator at rear prep area (holding milk, soymilk, and fruit) observed with holding temperature of 55°F and front display case (holding sandwiches, wraps, and salads) observed with holding temperature of 58°F.
5-01.1: Food not protected from contamination: Food is not protected from contamination. No splash guard present between cooking line handsink and prep table. Provide splash guard. Management instructed to initiate immediate corrective action.
19-01.1: Food safety certified individual not present: Food establishment personnel food safety certified individual is not present. City of Philadelphia Food Safety Certificate required. A certified individual must be present during times of operation and preparation. Employee completed class at end of December and is awaiting receipt of certificate. Application given to employee. Management instructed to initiate immediate corrective action.
Notes Note: Cold foods must be maintained below 41°F. If food is out of temperature for four hours, it must be disposed of properly. No potentially hazardous foods that are stored out of temperature for more than four hours total (including preparation time) may be kept for sale. Keep a temperature log of foods to ensure proper holding temperatures. Milk and soymilk were moved to a refrigeration unit with holding temperature of 38°F and employee stated that sandwiches, wraps, and salads are gone within four hour time limit. Management instructed to initiate immediate corrective action.
