5-01.1: Food not protected from contamination: Food is not protected from contamination. The prep areas in the basement do not have required overhead protection and the heavily soiled can opener needs cleaning. Management instructed to initiate immediate corrective action.
9-02.1: Employee hands not washed before food handling: Employee hands are not washed prior to food handling activities. No handwashing was observed as food handling employees went from one prep station to another when employees went from non food handling tasks and went from handling potentially hazardous food to non potentially hazardous foods. Management instructed to initiate immediate corrective action.
9-04 (B): Wiping cloths used in unapproved manner: Wiping cloths are used in an unapproved manner: not stored in sanitizing solution between use, in kitchen.
10-02.2 (A): Multi-use utensils not properly cleaned, sanitized: Multi-use utensils are not properly cleaned and sanitized. Food equipment and utensils were observed being cleaned and rinsed. No sanitizing was observed. Set up 3 bay utensil sink to WASH -- RINSE-SANITIZE. Use sanitizer provided. Management instructed to initiate immediate corrective action.
10-02.2 (C): Sanitizer temperature is inadequate: Sanitizer temperature is inadequate. In the high temp dish machine the observed final rinse temp was under 160°F at service(180°) from the manifold. Management instructed to initiate immediate corrective action.
