3-01.1 (A): Potentially hazardous food stored at improper temperature: Potentially hazardous food is stored at improper temperature. * 10-15 lb. Container of raw chicken temperature is 60°F-61°F in the food prep area, ambient temperature in the food prep area is 71°F, during time of inspection. Management instructed to initiate immediate corrective action.
5-01.1: Food not protected from contamination: Food is not protected from contamination. * Food items is not protected from cross-contamination between raw and prepared foods in the walk-in refrigeration unit. * Dark color grease is used in the deep fryer unit. * Food items is not protected from unclean bowl which was going to be used to serve to patron. * Employees are preping food without properly washing hands at the hand sink station, lacking hand soap and towels. * Food preping is conducted on several cutting boards which is in unsanitary conditions.

8-06.1.1 (A): Liquid waste not disposed of properly: Liquid waste is not disposed of properly. * Stagnet hazardous waste water is observed in the floor drain where the sump pump is located. Management instructed to initiate immediate corrective action.
9-02.1: Employee hands not washed before food handling: Employee hands are not washed prior to food handling activities. * Employees hands are not washed properly due to lack of hand soap & hand towels at the hand sink stations in the food prep areas, during time of inspection. * No running hot & cold water at the hand washing station in the kitchen area. Management instructed to initiate immediate corrective action.
9-04 (B): Wiping cloths used in unapproved manner: Wiping cloths are used in an unapproved manner. * Wiping cloths are not stored in a properly labeled container with sanitizer solution in the food prep area. Management instructed to initiate immediate corrective action.
10-02.2 (A): Multi-use utensils not properly cleaned, sanitized: Multi-use utensils are not properly cleaned and sanitized. * Sanitarian observed the employee not properly wash, rinse and sanitized the soiled bowl prior to use for patron, during time of inspection. Management instructed to initiate immediate corrective action, Sanitarian explained the proper procedure of wash, rinse and sanitize all food equipments.

Contact person has list of providers and application from the Dept. of Public Health. Management instructed to initiate immediate corrective action.
